Stretched curd cheese, whose characteristic pear shape is obtained by manual shaping. Drying is done by suspending the forms with ropes astride a pole. Provola has a sweet, slightly acidic flavor, tending towards spicy and is used in the preparation of typical dishes: breaded provola cutlets, falso magro all'Ennese, pumpkin gnocchi. It is also excellent grilled and sprinkled with oil and pepper. The matured one is also used as a grating cheese, excellent on short pasta.
