Pecorino Siciliano DOP is produced exclusively with whole, fresh sheep's milk coagulated with lamb rennet.
The milk used to make cheese comes from sheep raised on wild pastures. Salting is applied manually to each form. The maturing period is carried out in naturally ventilated rooms and is not less than 4 months.
Only in this way does Pecorino DOP acquire its own personality, maintaining all the flavours of Sicily.
